Things you need
1 medium onion, diced small with your sharp chef knife
100-150 grams pancetta or bacon, cut into small chunks (optional)
400 grams of your favorite pasta
1 tablespoon olive oil
1-2 cloves minced/grated garlic *use your grate plate!
⅔ cup white wine
⅓ cup cream
¼ cup pasta water
1 tablespoon butter (optional)
½ cup grated parm or your favorite hard cheese
Directions
- Warm sauce pan on medium low heat and add olive oil.
- Add onions, then pancetta after 5 minutes, and cook until onions are transparent, stirring often.
- Boil water for pasta.
- Add garlic and cook for an additional 1-2 minutes. The smell of raw garlic should be gone
- Pour in white wine and let simmer, reducing by half before adding cream.
- Optional: Add butter and a handful of freshly grated Parmesan.
- Add ¼ cup of pasta water to pan and simmer for a minute.
- Strain and add your pasta to the sauce, turning and coating the pasta. Don’t rush this step! give it a few minutes in the pan and really let the pasta absorb those flavours. Top with fresh parsley and more parm. Serve and enjoy right away🩷
