3/4 cup sugar (monk fruit preferred)
3/4 cup brown sugar
2 cups all purpose flour (fluff, scoop and level method)
¾ cup cocoa
1½ tsp baking soda(aluminum free)
2 tsp baking powder
1 tsp espresso powder (optional)
1 tsp salt
3 eggs
1 cup milk of choice
½ cup coconut oil/vegetable oil/butter
2 tsp vanilla
1 cup boiling water
Directions
- Preheat your oven to 350°F (175°C).
- Prepare a 13×9 inch baking dish with coconut oil and flour for easy release.
- Whisk together all dry ingredients in a medium bowl. Sift in your BS and BP.
3/4 cup sugar, 3/4 cup brown sugar, 2 cups flour, ¾ cup cocoa, 1 tsp baking soda, 2 tsp baking powder, 1 tsp espresso powder, 1 tsp salt - Melt the coconut oil and whisk with the rest of the ingredients in a large bowl.
3 eggs,1 cup milk, ½ cup coconut oil, 2 tsp vanilla - Combine by adding dry ingredients to the wet mixture bowl, then with whisk attachment on your hand blender, add in 1 cup of boiling water and whisk until everything is combined and the ingredients are smooth and even and free of lumps—do not over-mix this can lead to a dense cake.
- Bake for 30-35 minutes, or until a toothpick comes out clean.
- Cool completely before frosting with Easy Cream Cheese Frosting. Top with mini eggs and strawberries.
