  • You can use muffin liners but you really don’t need them! The muffins taste best made directly in the pan with a bit of Coconut Oil rubbed around it first. I use my clean hands to do this that way I ensure to get the cups all the way around. Plus! coconut oil is amazing for your skin 😏
  • When taking them out of the oven, use a knife to pull them out of the muffin tin and place on a cooling rack right away! If they stay in the pan you run the risk of them getting all steamed on the bottom.
  • This recipe doubles great!
  • You want to use the super over ripe brown bananas! the browner they are the sweeter. I’ll buy a big bunch knowing im going to throw 3 in the freezer for this recipe. Just let thaw in your bowl for an hour before mashing.

Things you need

  • bananas (see notes for tips)

  • large egg

  • ½ cup melted (not hot) butter (salted or unsalted)

  • ¼ cup milk of your choice

  • 2 teaspoons vanilla

  • 1/4 cup cocoa powder

  • ¼ teaspoon salt

  • ⅓ cup white sugar

  • ⅓ cup brown sugar

  • 2 teaspoons baking powder

  • 1 ½ cups all-purpose flour

  • 1 cup chocolate chips

Directions

  • Preheat your oven to 350°F while you prepare the ingredients.
  • Mash bananas in a bowl, then add the rest of the ingredients in the order listed, folding in chocolate chips with a spatula. You want everything to be well incorporated but don’t over mix.
  • Prepare your pan with coconut oil or liners.
  • Fill each muffin cup with approximately ⅓ cup of batter.
  • Bake on the middle rack for 25-30 minutes until edges are golden brown.
  • Transfer to a wire cooling rack as quickly as you can.
    The chocolate chips are very hot so be careful!

  • For best results use frozen ripened bananas let them thaw in a bowl for 1 hour before peeling and mashing
